Ingredients : Serves 2

  • 3 rindless streaky rashers bacon, cut into 1cm
  • lettuce, tear into bite-sized pieces
  • 3 small tomatoes, seeded and sliced 1cm
  • 1 avocado, halved, stoned, peeled and sliced
  • 1tsp freshly squeesed lemon juice
  • 1 green chilli (option), deseeded and finely chopped
  • 2 any kind of wraps
  • sea salt & freshly ground black peppercorns

  • In afrying pan fry the bacon until crispy for 5 minutes. Remove any excess oil with a kitchen peper.
  • Drizzle the lemon juice over the avocado to stop discolouring.

  • In a large pan over a low heat place the 2 wraps and warm them up for a few minutes. Turn them over and cook until warm for another 1 minutes.

  • Place the lettuce, tomatoes, avocado and bacon over the wrap. Sprinkle the chilli, if you like, and season with salt and pepper. Roll tightly and serve immediately.
