Ingredients : Serves 4

  • 250g couscous
  • 4 fresh tomatoes, deseed and cut into 1cm cubes
  • 1/4 cucumber, deseed and cut into 1cm cubes
  • 10 any kind pitted olives sliced into 4
  • 1 spring onions, chopped
  • 1/2 freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • A handful fresh basil, roughly chopped
  • 1/2 tsp sea salt
  • freshly ground black peppercorns

Instructions

  • In a large bowl place the couscous, pour 400ml boiling water and cover for about 5 minutes. Fluff up with a fork.
  • Add the lemon juice, oil, salt and pepper. Mix well with the tomatoes, cucumber, olives and spring onions. Adjust with salt and pepper.
