FOOD---Beans & Tofu

Ingredients : Serves 4

  • 100g green lentils, soak in water for a few hours
  • 150g pork mince
  • 1 onion, chopped
  • 1 stick celery, chopped
  • 1 tbsp cumin seeds
  • 1 tsp cinnamon
  • 500ml chicken soup stock made with 1 chicken oxo cube
  • 400g x 1 can chopped tomato in natural juice
  • 1/2 tsp salt
  • freshly ground black peppercorns
  • 1 tsp vegetable, corn or sunflower oil

  • lemon wedges
  • parsley or coriander, roughly chopped

  • In a heavy based pan heat the oil over a medium heat saute the pork until coloured.
  • Mix the onion and celery, cook for a few minute.
  • Add the tomato tin, soup stock, cumin seeds, cinnamon and beans. Bring to the boil and simmer for about 30 minutes.
  • Season with the salt and a little pepper.
  • Serve with the lemon, parsley or coriander.
