FOOD---Beans & Tofu

Ingredients : Serves 2

  • 1 onion, chopped
  • 1 carrot, peeled and chopped
  • 2 dried shiitake mushrooms, soaked in water overnight and drained or 4 Shiitake mushrooms, chopped
  • 1/2 pepper, seeded and chopped
  • 1.5 tbsp vegetable, corn or sunflower oil
  • 100ml soup stock made with 1 oxo cube
  • 1 tbsp curry powder
  • 1 tbsp tomato ketchup
  • 2 tsp oyster sauce
  • 1 tsp kikkoman soy sauce
  • salt & freshly ground black peppercorns


  • In a frying pan heat 1 tbsp of the oil over a medium heat fry the tofu.
  • Cutting roughly with a wooden spatula on the pan fry until golden brown. Set a side.
  • In a clearn frying pan heat the remaining oil over a medium heat, saute the onion, carrot and Shiitake mushorroms. until soften. Add the pepper.
  • Pour the soup stock and all ingredients for the seasoning cook for 5 minutes or until reduced.
  • Put the Tofu back and season with salt and pepper. Serve with boiled rice.
