Ingredients : Serves 10 (20~11~7cm loaf tin)

  • 200ml strong Earl Grey
  • 80g un-salted butter
  • 100g right brown muscovado sugar
  • 120g raisins*
  • 1 medium egg, beat well
  • 200g plain flour
  • 3/4 tbsp baking powder
*Alternatively mixed dried fruits can be used.
Place the baking parchment for the tin.


  • In a small pan heat the Earl Grey, butter, sugar and raisins over a moderate heat. Leave to cool.
  • Preheat the oven to 150C, gas mark 2.
  • Sieve together the flour and baking powder. Place the flour in a large bowl.
  • Mix the egg into the pan and using spatula or wooden spoon, fold in the flour and the mixture.
  • Spoon the mixture into the loaf tin, and bake for 35 minutes.
  • Turn down the heat to 120C, gas mark 1/2. Cook another for 35 minutes unti cooked. Test it with a skewer to see if the mixture is cooked in the centre.
  • Cool in the tin. Serve with butter if you like.
