  • 200g strong flour
  • 85ml cold water
  • 20g ginger, finely chopped
  • 2 spring onions, finely chopped
  • 1tsp Chinese soup stock powder
  • 3 tbsp kikkoman soy sauce
  • 2 tbsp ground sesame seeds
  • 1.5 tbsp sesame oil
  • 1.5-2 tsp chili bean sauce(Toban djan)
  • 100g minced pork
  • 200g bean sprouts
  • 1/3 tsp kikkoman soy sauce
  • freshly ground black peppercorns
  • 1/2 tsp vegetable, corn or sunflower oil for saute

  • Dissolve the stock powder with 2 tbsp hot water.
  • Mix well all ingredients for the sauce.
  • In a frying pan heat the oil over a medium heat saute the pork until coloured.
  • Add the bean sprouts and cook for a few minutes. Season with the soy sauce and pepper. Set aside.
  • In a large pan cook the noodles in plenty of boiling water for about 5 minutes. Using chopstickes loosen the noodles.
  • Cook until the noodles became transparent and taste them.
  • Drain the noodle but set a side 2 ladlefuls of boiled water and divide in 2 including the water.
  • Lay the pork and bean sprouts over the noodles. Serve immediately with the sauce.
  • Mix well with the noodles and sauce.
