Ingredients : Serves 4

  • 1kg pork spare ribs
  • salt & freshly ground black peppercorns
    -----<For marinade>-----
  • 100ml 100% orange juice
  • 3 tbsp kikkoman soy sauce
  • 2 tbsp honey
  • 1 tbsp tomato ketchup
  • 1 tsp worcester sauce
  • 1 tsp any kind of mustard
  • 1 clove garlic, crushed
  • 30g ginger, grated

  • Season the pork with the salt and pepper slightly.
  • In a reclosable bag put the pork and all ingredients for marinade.
  • Expel the air from the bag, then seal it and massage.
  • Refrigerate overnight or up to for 2 days.
  • Preheat the oven to 200C, gas mark 6.
  • Place a baking sheet on the oven tray, spread the pork and reserve the marinate. Cook for about 20 minutes.
  • Spoon the marinate over the pork, turn them over and cook for another 10 minutes utnil golden brown.
