Ingredients : Serves 4

  • 4 medium potatoes, peeled, cut into 1cm strips soaked and well drained
  • 1 medium onion, chopped roughly
  • 4 eggs, beat
  • 15 any kind of olives, drained and cut into 3
  • 2 tsp olive oil
  • olive oil for deep frying
  • 1/3 tsp + salt, for the eggs and chips
  • freashly ground black peppercorns

  • Preheat the oil in a deep frying pan to 160C. Fry the chips until they have a crisp. Shake off excess oil and sprinkle with salt lightly.
  • In a frying pan heat the 1tsp olive oil over a modelate heat, saute the onion until slightly coloured. Set aside.
  • Season the egg with the 1/3 tsp salt and pepper.
  • In a non-stick frying pan heat the 1tsp oil over a modelate heat, pour the egg. Sprinkle with the chips, onion and olives. Cover with the lid and cook for about 15 minute or until the eggs set.
