  • 1 medium tomato, seeded and cut into 1.5cm cubes
  • a handful watercress, washed and cut into 3
  • 1 egg, beat
  • 500ml Chinese soup stock, made with chinese soup stock
  • salt & freshly ground black peppercorns

  • In a pan boil the soup stock over a medium heat and add the tomato.
  • Bring to a boil again and season with salt and pepper.
  • Add the watercress and egg. Cook until the egg set. Serve immediately.
