Ingredients : Serves 4

  • 1/2 medium savoy cabbage, cut into strips
  • 1 small leek, washed throughout and roughly chopped
  • 3-4 smoked rindless streaky rashers bacon, cut into 5mm
  • 1 bay leaf
  • 800ml vegetable soup stock made with 1 vegetable oxo cube
  • 1 tbsp olive oil
  • salt & freshly ground black peppercorns

  • In a heavy based pan, heat the oil over a moderate heat fry the bacon until coloured.
  • Add the leek and cabbage and stir for a few minutes.
  • Pour the soup stock and bay leaf, then turn up to a high heat. Bring to the boil and simmer for 30 minutes with covered.
  • Season with the salt and pepper.
