Ingredients : Serves 2

  • 2 fresh ray wings(skate)
  • 12 petit tomatoes, halved
  • 2 tbsp capers, drained and chopped
  • 3 tbsp parsley, chopped
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 clove garlic, sliced
  • salt & ground white(black) peppercorns
  • 2 tbsp plain flour

  • Pat the ray wings dry with kitchen paper and season with salt & peppercorns and flour them.
  • *Heat the oil and butter in a pan over a medium heat, fry the ray wings for about 3 minutes.
  • Turn them over and fry another 2 minutes. Set aside to keep them warm.
  • Heat the same pan over a medium heat and fry the garlic.
  • Add the tomatoes and capers, then cook for about 3 minutes to warm up.
  • Scatter with the parsley.
  • Place the ray wings on each plate and spoon the tomato sauce over. Serve immediately.

*If the wings are too big to fry at once, fry each using half of the oil and butter.
