FOOD---Rice & Grain

Ingredients : Serves 4

  • 125g camargue red rice
  • 2 sticks green celery, cut into 8mm cubes
  • 1/4 red pepper, seeded and cut into 8mm cubes
  • 1/4 yellow pepper, seeded and cut into 8mm cubes
  • 1/4 green pepper, seeded and cut into 8mm cubes
  • 5 sun dried tomatoes, soak in lukewarm water for about 20 minutes and drain. Cut into 8mm cubes
  • 10 any kind of pitted olives, cut into 3 (if necessary)
  • 1.5 tbsp freshly squeezed lemon juice
  • a handful flat parsley, chopped
  • 1 clove garlic, sliced
  • 1.5 tbsp olive oil
  • 1/2 tsp salt
  • freshly ground black peppercorns
  • red dried chilli

  • Cook the rice according to the pack instructions, ; for about 30 minutes.

  • Place the celery, dried tomatoes and olives in a heat-proof bowl.
  • In a frying pan heat the oil and garlic over a low heat. Fry until the garlic coloured and add the chilli if you like, then turn off the heat. Stir into the pepper.
  • Pour the garlic oil with the pepper into the heat-proof bowl. Stir and add the lemon juice.
  • Drain well the rice and add the heat-proof bowl. Toss with the parsely and season with the salt and pepper. Serve immediately.
