Ingredients : Serves 4

  • 500g salad potatoes, peeled, cut into 5mm strips, soaked in water and drained
  • 5 asparagus
  • 10 raw prawns, removed the dark digestive cords
  • 1/2 tsp Japanese sake
  • salt
    -----<Wasabi mayo dressing>-----
  • 1 tbsp capers, chopped
  • 5 tbsp mayonnaise
  • 1 tsp white wine
  • 2/3 kikkoman soy sauce
  • 1/2-1 tsp wasabi

  • In a pan cook the potatoes in boiling salted water for 3 minutes, not until softened. rinsed and drained.
  • Cook the asparagus and cut diagonally.
  • In a small pan heat water with a pinch of salt and the sake. Bring to a boil and add the prawns for about 5 minutes.
  • Rinsed and drained. Then shell and remove the tails.
    -----<Wasabi mayo dressing>-----
  • Mix togeher all ingredients for wasabi mayo dressing.
  • Dress the potetoes, asparagus and prawns with wasabi mayo dressing. Adjust with salt if necessary.
