  • 3 medium carrots, peeled and cut into julienne strips or cut with a slicer
  • 1.5 tsp extra virgin olive oil
  • 1.5 tsp freshly squeezed lemon juice
  • 1 tsp wholegrain mustard
  • 1/4 tsp salt & freshly ground black peppercorns

  • For the dressing, mix well the oil, lemon juice, mustard, salt and pepper.
  • Toss well the carrots with the dressing. Taste it and adjust.
