FOOD---Beans & Tofu

Ingredients : Serves 4

  • 200g 10 bean mix, soaked overnight
  • 5-6 sun-dried tomatoes, soak in lukewarm water for about 20 minutes, drain and cut into 7mm stripes
  • 2 sticks celery, cut into 7mm cubes
  • 2 spring onions, finely chopped
  • 10-15 any kind of olives, cut into 3
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • freshly ground black peppercorns

Instructions

  • Drain the beans and place in a pan with fresh water, bring to the boil and simmer for 45-50 minutes or until soften. Drain.
  • As soon as the beans are drained, dress with lemon juice, virgine oil, salt and pepper.
  • Leave to cool and add the dried tomatoes, celery, spring onions and olives.
