10 bean mix and Sun-dried Tomato Salad

Ingredients : Serves 4

200g 10 bean mix, soaked overnight
5-6 sun-dried tomatoes, soak in lukewarm water for about 20 minutes, drain and cut into 7mm stripes
2 sticks celery, cut into 7mm cubes
2 spring onions, finely chopped
10-15 any kind of olives, cut into 3
2 tbsp freshly squeezed lemon juice
3 tbsp extra virgin olive oil
1/2 tsp salt
freshly ground black peppercorns

Instructions

	Drain the beans and place in a pan with fresh water, bring to the boil and simmer for 45-50 minutes or until soften. Drain. As soon as the beans are drained, dress with lemon juice, virgine oil, salt and pepper. Leave to cool and add the dried tomatoes, celery, spring onions and olives.
