Ingredients : Serves 4

  • 2 tomatoes, seeded and cut into 1.5cm cubes
  • 10 any kind of pitted olives, cut into 3
  • 1 stick green celery, cut into 1cm cubes
  • 1 green chilli, seeded and finely chopped
  • 1 riped avocado, halved, stoned, peeled and cut into 1.5cm cubes
  • 125g pack mozzarella cheese, drained cut into 1.5cm cubes
  • 1/2 freshly squeezed lemon juice
  • 1.5 tbsp extra virgin olive oil
  • 1/3 sea salt
  • freshly ground black peppercorns

  • In a large bowl mix together the tomatoes, olives, celery and chilli. Dress with the lemon juice, olive oil, salt and pepper.
  • Add the avocado and mozzarella. Toss them all and serve immediately.
