  • 40g zhacai(szechwan pickles), soaked in water for 30 minutes to desalt, shredded.
  • 80g roasted pork, shredded
  • 1/2 pepper, seeded and shredded
  • 2 spring onions, chopped diagnally and finely
  • 2 portions of udon noodles
  • 2 portions of udon soup
  • 2 tbsp sesame oil

  • In a large pan cook the udon in boiling water according to packet instructions until soften and drain.
  • In a pan heat and make the soup. Then divide the udon and soup into 2 equal portion in serving bowls.
  • Meanwhile, in a small frying pan heat the oil over a moderate heat for 2-3 minutes or until piping hot.
  • Lay the zhacai(szechwan pickles), roasted pork, pepper and spring onions over the noodles.
  • Drizzle the oil over the top. Serve immediately.
