Ingredients : Serves 4

  • 8 medium (800g) potatoes, peeled, cut into chunks, soaked in water and drained
  • 1/2 medium onion, finely chopped, soaked in water and drained
  • 1 stick celery, finely chopped
  • 20 black pitted olives, sliced
  • 2 tbsp capers, drained and finely chopped
    -----<for the seasonig>-----
  • 1 tsp oregano
  • 1-2 tsp squeesed lemon juice
  • 1.5 tsp kelp powder (If available)
  • 3 tbsp extra virgin olive oil
  • salt & freshly ground black peppercorns

Instructions

  • In a pan cover the potatoes with water and cook the over a medium-high heat until boiling.
  • Turn down the heat and simmer for about 15 minutes or until they are softened.
  • Discard the water and shake the pan gently to evaporate excess moisture.

  • In a bowl mix together the onion, celery, olives, capers, and the seasoning.
  • Add the potatoes, dress them and adjust with the salt and pepper.
