  • 6 medium potatoes, peeled, sliced with a slicer or slice thinly, soak in water and drained
  • 1/2 small leek, halved, washed and cut diagonally and finely
  • 100g any kind of cheese, cut into 1cm cubes
  • 284ml (1) double cream
  • 1/2 clove garlic, finely chopped
  • 1/2 tsp salt
  • freshly ground black peppercorns
  • 1/2 tbsp olive oil
*Preheat the oven to 190C, gas mark 5.

  • In a large oven proof dish, coat with the oil and scatter with the garlic.
  • Place a quarter of the leek and potatoes, season with salt and pepper then cover with cheese. repeat it 4 times.
  • Pour the double cream evenly over.
  • Bake for about 35-40 minutes until golden on top.
  • Serve immediately.
