Ingredients : Serves 10 (20~11~7cm cake tin)

*Leave it room temperature for about 30mins.
Preheat the oven to 170C, gas mark 3.
***Place baking parchment for the tin.

  • Sieve together the flour and baking powder.
  • Beat the butter and add the sugar until light and fluffy using a whisk.
  • Add the eggs little by little and mix with the lemon juice and milk until they are fully incorporated and the mixture is smooth.
  • Add the lemon zest.
  • Using spatula or wooden spoon, fold in the flour with baking powder, polenta and the mixture.
  • Spoon the mixture into the loaf tin, and bake for 30-35minutes. Test it with a skewer to see if the mixture is cooked in the centre.
