  • 8 (2 packs) chicken wings
  • 3 spring onions, finely chopped
  • 30g ginger, finely chopped
  • 1-2 tsp chili bean sauce(Toban djan)
  • 2 tbsp Japanese miso
  • 1 tbsp honey
  • 1 tbsp Japanese sake


  • Divided the chicken into 3 pieces and reserve the thick and middle parts.
  • Mix all ingredients for marinade.
  • In a reclosable bag put the chicken and marinade.
  • Expel the air from the bag, then seal it and massage the marinade into the meat. Refrigerate for 3 hours or overnight.
  • Preheat the oven to 220C, gas mark 7.
  • Place the baking parchment for the oven tray, then lay the chicken leaving some space between them.
  • Bake for about 20-25 minutes until cooked through and golden brown.
