  • 120g x 1 can sardines in vegetable or olive oil, drained
  • 2 spring onions, finely chopped
  • 20g ginger, finely chopped
  • 220-250g long pasta (spaghetti)
  • 1.5-2 tbsp olive oil
  • 2 tbsp kikkoman soy sauce
  • 1 tbsp Japanese sake
  • freshly ground black peppercorns
  • shredded laver for topping

  • Drop the pasta into a large (pasta) pan of plenty boiling, salted water. Cook according to packet instructions until al dente ;about 10-12 minutes.
  • In a large frying pan heat the olive oil and sardines over a medium heat. Fry until lightly coloured for about 5 minutes tearing into pieces.
  • Add the spring onions, ginger and sake.
  • Drain the pasta in a colander and return it to the frying pan. Pour the soy sauce and toss together seasoning with the pepper.
  • Sprinkle over the laver and serve immediately.
