  • 1/2 green pepper, seeded and cut into 8mm strips
  • 1/2 yellow pepper, seeded cut into 8mm strips
  • 1/2 red pepper, seeded cut into 8mm strips
  • 220-250g long pasta (spaghetti)
  • 1.5 tbsp olieve oil
  • 1 clove garlic, sliced
  • red dried chilli
  • 1/2 tsp salt
  • freshly ground black peppercorns


  • Drop the pasta into a large (pasta) pan of plenty boiling, salted water. Cook according to packet instructions until al dente ;about 10-12 minutes.
  • In a large frying pan heat the olive oil and garlic over a low heat. Fry until lightly coloured for about 3-4 minutes.
  • Turn up over a medium heat add the chilli if you like and peppers. Cook for 7-8 minutes or until softened.
  • Drain the pasta in a colander and return it to the frying pan. Toss with the peppers and season with the salt and pepper. Serve immediately.
