Ingredients : Serves 2

  • 150g (1 pack) shimeji mushroom*, slice the base off and pull into smaller clumps
  • 100g (2/3 pack) enoki mushroom*, slice the base off and pull into smaller clumps
  • 20g ginger, finely chopped
  • 30g butter
  • 4 tbsp white wine
  • 2 tbsp kikkoman soy sauce
  • 220g long pasta (spaghetti)
  • laver (option)
*Do not wash with water. Wipe away any dirt with a kitchen peper.

  • Drop the pasta into a large (pasta) pan of plenty boiling, salted water. Cook according to packet instructions until al dente - about 10-12 minutes.
  • 3 minutes later, when the pasta is dropped into boiling water, melt the butter in a large frying pan over a midium heat.
  • Saute the shimeji, enoki mushrooms and ginger. Cook for a few minutes until coated
  • Pour the wine and bubble up to evaporate the alcohol.
  • Turn down to a low heat, add the soy sauce and simmer until the pasta is boiled.
  • Drain the pasta in a colander, return to the frying pan and stir in the sauce.
  • Place laver on top and serve immediatly.
