  • 140g un-salted butter, leave at a room temprature
  • 70g granulated sugar
  • 1 egg white, beat
  • 100g plain flour
  • 100 corn flour
  • 3 tbsp orange peel, chopped if necessary
  • 1 grated lemon zest
*Preheat the oven to 170C, gas mark 3 until the dough is ready.
**Place baking parchment on the oven tray.


  • Sieve together the flour and corn flour.
  • Beat the butter and sugar until light and fluffy using an electric whisk.
  • Mix well the egg white, lemon zest and orange peel until evenly combined.
  • Using a spatula or wooden spoon, fold in the flour mixture and settle in a fridge for 1 hour.
  • Turn out onto a lightly floured surface and roll into a log shape in 4cm diameter and settle in the fridge again for a few hours to make forming easier.
  • Slice into about 4-5mm on a lightly floured surface or scattered with granulated sugar.
  • Place onto the prepared baking sheets, spacing them well apart.
  • Bake for 13-15 minutes until the cookies are lightly golden.
  • Transfer to a wire rack to cool.

Alternatively, raisins or rum raisins can be used instead of orange peel.
