Ingredients : 12 Muffins

  • 250g plain flour
  • 2 tsp baking powder
  • 80g granulated sugar
  • 120ml semi skimmed milk
  • 2 eggs
  • 60ml vegetable, corn or sunflower oil
  • 2 tbsp honey
  • 5 tbsp mixed dried fruit
*Preheat the oven to 190C, gas mark 5


  • Line a 12-hole muffin tin with paper muffin cases.
  • In a small bowl crush the bananas with a folk.
  • In a large bowl, mix together the flour, baking powder and sugar.
  • In a jug mix together the milk, eggs, oil and honey, then pour over the dried ingredients (flour & baking powder).
  • Using a rubber spatula or large metal spoon, fold the ingredients together until just mixed, then gently fold in the dried fruit.
  • Divide evenly between muffin cases. Bake for 20 minutes in the oven until golden brown and well risen. Test it with a skewer to see if the mixture is cooked in the centre.
  • Remove from the tin and transfer to a wire rack to cool. Serve warm or cold. The muffins will keep for up to 2 days in the fridge.
