Ingredients : Serves 4

  • 500g(1pack) minced pork
  • 100g water chestnuts, drained and finely chopped
  • 1 egg
  • 2tbsp potato starch
  • 1/2 tsp salt
  • ground black peppercorns
  • 1 tbsp freshly squeezed ginger juice
  • 1 tbsp miso
  • 1 tbsp chinese wine*
  • 1 tsp sesame oil
  • vegetable, corn or sunflower oil for deep-frying
*Alternatively, Japanese sake can be used.

  • In a bowl, mix well all ingredients except oil for deep-frying.
  • With wet hands, roll into walnut-sized balls.
  • Heat enough oil to deep-fry in a large frying pan over a medium heat(160P170C). Fry them a few at a time, for 5-7 minutes, or until crisp and golden, then drain on kitchen paper.
