  • Soak the gelatine powder in 4 tbsp cold water* for a few minutes.
  • In a saucepan heat up the milk about 70C and dissolve the sugar.
  • Add the gelatine and whisk the mixture until the geletine dissolves, then leave it cool as room temperature.

  • In a small bowl, mix well the green tea powder and 2tbsp hot boilng water.
  • Combine the the green tea and milk, then add the single cream.
  • Strain through a fine sieve and cool with iced water stirring occasionally until it begins to thicken.
  • Pour into a large or individual moulds and remove any bubbles if any above the mixture
  • Chill in the fridge for about 7-8 hours until set.

  • In a medium sized bowl put the sugar and same amount(100ml) of water.
  • Microwave on high power for 3 minutes but each 1 minute to avoid boiling over.
  • Remove any scum with a spoon and cool it.
  • Scoop the panna cotta, if you use a large mould and serve with the syrup.
