  • 2 organically produced free range hens eggs
  • 250g (1 pack) spinach
  • 4 tbsp whipping cream
  • 4 tbsp grated Parmigiano reggiano
  • salt & freshly ground black peppercorns
  • 1 tbsp butter
*Preheat the oven to 190 C, gas mark 5.

  • Use a skewer to make a few small holes in both side of the pack and cook in a microwave on high for 1.5 minutes.
  • Rinse, drain the spinach and squeeze to remove the excess water. Cut into chunks if necessary.
  • Grease 2 heatproof dishes with the butter, divide the spinach and dimple for the egg.
  • Break the egg carefully into each one and season with salt and pepper.
  • Sprinkle the Parmigiano reggiano and pour the cream on top.
  • Cook for about 15 minutes until the eggs are softly set. Serve immediately.
