Ingredients : Serves 2

  • 2 courgettes, trimmed and quartered lengthways
  • 2 chicken thigh, removed the bones
  • 3 tbsp olive oil
  • 1 tbsp white wine
  • salt & ground black peppercorns
  • 2 sprigs of rosemary
    -----<for beadcrumbs>-----
  • 4 tbsp breadcrumbs
  • 1 clove of garlic, finely chopped
  • 2 tbsp roughly chopped parsley
  • 1tsp dried oregano*
  • 2 tbsp grated Parmigiano reggiano
  • red dried chili as a option
*Alternatively, your favorite herbs can be used.
**Preheat the oven to 200C, gas mark 6.

  • Pierce the chicken with a folk and marinated with the wine, olive oil, salt and pepper.
  • Mix together the breadcrumbs, garlic, parsley, oregano, parmigiano reggiano and chilli, if you like.
  • Lightly grease an individual shallow ovenproof dish.
  • Place the courgettes and turn over them as each slice is coated with the oil.
  • Lay the marinated chicken on the courgettes and sprincke the breadcrumbs.
  • Put the rosemary in the centre and drizzle 1 tbsp per person olive oil all over it.
  • Cook for about 20 minutes or the chicken is completely cooked and until golden on top.
  • Serve immediately.
