FOOD---Rice & Grain

Ingredients : Serves 4

  • 2-3 dried shiitake mushrooms*
  • 20g dried shrimps*(Altenatively, dried scallops can be used
  • 30g zhacai(szechwan pickles), soaked in water for 30 minutes to desalt and chopped
  • 20g ginger, finely chopped
  • 1 tbsp sake
  • 2/3-1 tsp salt
  • 450g Japanese rice
  • 2 tbsp Toasted sesame oil
  • 3 spring onions, finely chopped
  • 1 tbsp grated toasted sesame
  • ground black peppercorns
*Soak the dried shiitake mushrooms and dried shrimps into 400ml cold water over night. Reserve the soaked water.

  • Divide into the shiitake and shrimps.
  • Slice the shiitake and chop the shrimps.

  • Wash the rice and drain in a sieve. Set a side for about 30 minutes.

  • Make 480ml soup with soaked water, sake and cold water.
  • Place the rice in a rice cooker and pour the soup stock, then sprinkle the shiitake, shrimps, zhacai and ginger.
  • Cook until the rice has been cooked.
  • Meanwhile, soak the spring onions into the sesame oil.
  • Leave the rice after cooked for about 15 minutes to allow it to settle.
  • Mix the sesame oil with spring onion into the rice.

  • Sprinkle the toasted sesame and black pepper. Serve immediately.
