Ingredients : Serves 5

  • 500g x 1 pack lean ground beef (Typically 10% fat)
  • 2 onions, chopped
  • 1 carrot, chopped
  • 2 green celery, chopped
  • 1 clove of garlic, finely chopped
  • 410g can red kidney beans, drained and rinsed
  • 400g can chopped tomato in rich natural juice
  • 50ml red wine
  • 2-3 bird's eye chilli
  • 2-3 bay leaves

  • 200ml vegetable stock, made with 1 Vegetable Oxo cube
  • 1 tbsp tomato ketchup
  • 1 tsp worcester sauce
  • 1 tsp kikkoman soy sauce
  • salt and freshly ground black pepper
  • 1 tbsp olive oil

Instructions

  • In a casserole heat the oil and garlic over a midium heat.
  • Add the beef and fry for 10 minutes with a wooden spoon.
  • Mix the onions, carrot and celery and saute them until coated, add the wine.
  • Add the stock, tomato and beans.
  • Stir in the chilli, bey leaves, tomato ketchup and worcester sauce.
  • Simmer for 1 hour until thick and season with soy sauce, salt and pepper.
  • Serve with rice or toasted tortillas.
