Ingredients : Serves 4

  • 500g chicken breast*, cut into chunks
  • 40g ginger, peel and finely grated
  • 3 tbsp soy sauce
  • 1 tbsp sake
    -----<to coat>-----
  • 4 tbsp plain flour
  • matzo meal
  • vegetable, corn or sunflower oil for saute and deep-frying
*chicken thigh can be used.

  • Mix together the soy sauce, sake and ginger to make the marinade.
  • Soak the chicken into the marinade for a few hours or for a night.

  • Mix well the flour and 4 tbsp water with a small whisk. (Flour mixture)
  • Put the flour mixture for coating on one plate, and the matzo meal on another.
  • Drain any excess moisture, dip each chicken first in the flour mixture and then into the matzo meal, pressing to coat.
  • Heat enough oil to deep-fry in a large frying pan over a medium-high heat. Fry them a few at a time, for about 5 minutes, or until cooked and crisp, then drain on kitchen paper.
  • Serve immediatly.
