  • 4 chicken thigh, cut into 3cm cubes
  • 2 spring onions, cut into half
  • 3-4 tbsp kikkoman soy sauce
  • 4 tbsp sake
  • 1/2 tsp freshly ground black peppercorns
  • Spring onion for topping, cut finely

  • Bring the water to a boil in a pan, boil the chicken for 2 minutes for preparations, then drain.
  • Replace 1000ml water over a high heat, boil the chicken and the spring onions, skim off any scum.
  • Reduce the heat add the soy sauce, sake and peppercorns, cook for 30minutes.
  • Remove the spring onions and serve with cut spring onion.
