FOOD---Beans & Tofu

Ingredients : Serves 4

  • 150g chick peas* ,soaked overnight
  • 1/4 cucumber, seeded and cut into 1cm cubes
  • 5 cherry tomatoes, seeded and quartered
  • 80g any kind of cheese, cut into 1cm cubes
  • 1 tbsp extra virgin olive oil
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp wholegrain mustard
  • 1/2 tsp salt
  • freshly ground black peppercorns
  • 3 tbsp mayonnaise
*Approx. 300g when you boiled them. Altenatively you can use 300g can chick peas.

  • Drain the beans and place in a pan with fresh water, bring to the boil and simmer for about 30 minutes or until soften.
  • Drain and return to the pan. Shake the pan over a low heat to evaporate excess water.**
  • As soon as the beans are drained, dress with lemon juice, virgine oil, mustard and salt and pepper.
  • Leave to cool at a room temperature.
  • Mix together the beans, cucumber, tomatoes and cheese with mayonnaise. Adjust with salt and pepper.
