Ingredients : Serves 4

  • 1 x 0.5kg pack ground veal / lean ground beef (Typically 10% fat)
  • 50g ginger, finely chopped
  • <Seasoning>
  • 4 tbsp kikkoman soy sauce
  • 3 tbsp sugar
  • 1 tbsp sake
  • 1 tbsp mirin

  • A handful of trimmed mange tout peas
  • 2 eggs
  • A pinch of salt
  • Vegetable oil

  • In a non-stick frying pan saute the ground veal / beef for 5minutes.
  • Turn down the heat, add the ginger and all seasonings and stir well for 10minutes.

  • Meanwhile, boil the peas for 5minutes and cut diagonally and finely.
  • Cook scrambled eggs:
    Beat together the eggs and salt. Heat the oil in a frying pan and cook until they are crumbly.

  • In a large rice bowl place the boiled rice, cover with the beef and sprinkle with the peas and scrambled eggs.
  • Serve immediately.
