FOOD---Beans & Tofu

Ingredients : Serves 4

  • 250g green lentils, soak in water for a few hours
  • 2 onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 tbsp curry powder
  • 1 tbsp garam masala
  • 1 tbsp cumin seeds1
  • 2 bay leaves
  • 1 vegetable oxo cube, add 50ml boiling water and stir to dissolve
  • 1 tsp salt
  • 120ml vegetable oil
  • 1/2 onion, sliced wafer-thin, soak in water and drain
  • 1/2 lemon, cut


  • Place the lentils in a large pan with plenty of water, bring to boil and simmer for 5-10 minutes or until soft, drain, rinse and set aside.
  • Heat the oil in a frying pan over a moderate heat. Fry the onion and garlic until golden brown for 20-25 minutes.
  • Turn down the heat, add the spice and stir well for a few minutes.
  • In a large pan mix together the lentils and onion mixture.
  • Add the vegetable stock, season with the salt and saute for 5 minutes.
  • Serve with the sliced onion and lemon.
