  • 1 plain bagel
  • 3 slices of sun-dried tomatoes
  • Parmigiano reggiano, sliced wafer-thin
  • a handful of rocket
  • mayonaise
  • butter
  • freshly ground black peppercorns

  • In a small bowl, cover the sun-dried tomatoes with lukewarm water and leave to soak for 20 minutes, then drain and chop.
  • Toast the bagel and butter.
  • Spread mayonaise on one side, cover the rocket, tomatoes and parmigiano reggiano.
  • Season with pepper and top with the remaining bagel.
