Ingredients : Serves 4

  • 3-4 medium new potatoes*, peeled if necessary, cut in 2-3, trimmed soaked in water and drained
  • 2 turnips, peeled and quartered
  • 1 carrot, peeled and cut into large chunks
  • 1/2 leek, cut into 4cm length
  • 1 stick green celery, cut into large chunks
  • 3: rashers bacon, cut into 4
  • 1,000ml vegetable soup stock made with 1 vegetable oxo cube
  • 2 bay leaves
  • salt & freshly ground black peppercorns
*Alternatively, salad potetoes can be used.

  • In a casserole, boil the soup stock over a high heat and add the bay leaves and bacon.
  • Once bring to a simmer, reduce the heat to a low heat.
  • Add the carrot, celery, leek, potatoes and turnips. Gently cook for about 1 hour skimming off any scum.
  • Season with salt and pepper.
