Ingredients : Serves 4

  • 5 rashers bacon, chopped
  • 1 onion, roughly chopped
  • 1 carrot, cut into 1cm cubes
  • 3 potatoes, cut into 1cm cubes, soak in water, and drain.
  • 100g button mushrooms
  • 2 tbsp butter
  • 3 tbsp plain flour
  • 600ml semi skimmed milk
  • 1 chicken oxo cube, add 50ml boiling water and stir to dissolve
  • 4 tbsp frozen peas
  • Salt & black peppercorns

  • Melt the butter in a pan and fry the bacon, onion, carrot, potatoes and mushrooms for a few minutes.
  • Add the flour and stir constantly using wooden spoon.
  • Pour the milk little by little and mix to get a smooth consistency.
  • Add the chicken stock and bring slowly to the simmer.
  • Add the peas and cook 5 more minutes, or until the vegetables are tender
  • Season with salt and freshly ground black pepper.
