Ingredients : Serves 4

  • 1 aubergine, halved and cut about 1cm thickness
  • 1/2 pepper, halved ,deseed and cut about 5mm thickness
  • 100g sliced pork belly, cut into pieces
  • 20g ginger, finely chopped
    <Seasoning>
  • 3 tbsp miso
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1 tbsp sugar

  • 2 tbsp vegetable oil
    ------------------------------
  • Toasted sesame
  • Japanese spice (Shichimi)

  • Soak the aubergine in water, then drain well.
    ------------------------------
    <for seasoning>
    Mix the miso, mirin, sake, sugar in a small bowl.
    ------------------------------
  • Heat the oil in a large frying pan and fry the pork until it browns.
  • Mix the ginger and aubergine, saute until the aubergine are slightly softened.
  • Add the mixed seasoning.
  • Turn down the heat and cook for 10minutes, stirring constantly.
  • Add the pepper, saute until the pepper are softened.
  • Serve with toasted sesame and Japanese spice.
