Ingredients : Serves 10 (Makes 1 x 900g loaf)

  • 2 Granny Smith or Braeburn apples, peeled, quartered, cored and sliced thinly.
  • 1/2 tsp cinnamon
  • 100g unsalted butter*, softened
  • 100g right brown muscovado sugar
  • 2 eggs, beaten
  • 120g plain flour
  • 1 tsp baking powder
  • 1 tbsp semi skimmed milk
*Leave it room temperature for about 30mins and softened.
Preheat the oven to 160C, gas mark 3.
***Place baking parchment for the tin.

  • Sieve together the flour and baking powder.
  • Put the apples in a small bowl and add 1tbsp of the sugar and cinnamon, then toss well to coat.
  • Beat the butter and remaining sugar until light and fluffy using whisk.
  • Add the eggs little by little and the milk until they are fully incorporated and the mixture is smooth.
  • Using a spatula or wooden spoon, fold in the flour and the mixture, then add the apples evenly.
  • Spoon the mixture into the loaf tin, and bake for 45minutes. Test it with a skewer to see if the mixture is cooked in the centre.
  • Remove from the tin and transfer to a wire rack to cool.
