Ingredients : Serves 4

  • 1 cauliflower, cut into florets
  • 1 aubergine, cut into chunks and soaked in water, then drain well
  • 1 pepper, halved ,deseed and cut into chunks
  • 1 onion, peeled and cut into 8
  • 1 carrot, peeled and sliced
  • 1(400g) canned chopped tomato in natural juice
  • 1 clove garlic, finely chopped
  • 150ml soup stock or made with 2 vegetable Oxo cube
  • salt & ground black peppercorns
  • 2 tbsp vegetable, corn or sunflower oil
  • 1.5 tbsp curry powder
  • 1.5 tbsp garam masala
  • 1 tsp cumin seeds
  • 1/2 tbsp ground coriander

  • Heat the oil in a large frying pan and fry the garlic until lightly coloured for about 3-4 minutes and add the all spices.
  • Turn the heat slightly high, add the vegetables and mix together until they are coated with the spices.
  • Pour the soup stock and the canned tomato, cook until boiling.
  • Turn down the heat and simmer for about 30 minutes.
  • Season with salt and pepper.
  • Serve with couscous.
